Mango Recipes

Hey, I live in Florida, what can you expect? When it's Mango season I go crazy. We get so many that you have to use them up and quickly. You can also harvest and freeze them but besides that I like to make some fun and healthy creations. These recipes feature a bit of both! Hope you love these like I do!




Protein Mango Ice Cream:

1+ cup mangos

1 cup coconut milk (from can)

2 - 4 scoops vanilla protein powder


First put in blender to mix then- add to Ninja Creami container. Wait 24 hours later, add to Ninja Creami Machine to do it’s magic, mix & serve.

If you do NOT have a Ninja Creami, don’t worry. You’ll get to eat yours sooner! Put blended mix in a glass bowl with lid and put in freezer only 2-3 hours. Take out to thaw a bit, then scoop and serve!

Tuna & Mango Poke Bowl:

1 Ahi Tuna chopped into cubes

1/4 - 1/2 cup Mangos

1/4 cup chopped onions

1/4 cup chopped cilantro

Squeeze of 1 lime, 1 squirt sriracha or splash of cayenne pepper, pinch of salt

Optional add ins: Edamame, shredded carrots, snow peas, bell peppers, sesame seeds, other seasonings, etc.


Mix all ingredients together and add seasonings to taste at end. Serve over cauliflower rice or mixed greens or regular rice if you don't have any metabolic conditions.

Riannan’s Mango Bread – GF & DF


2-3 ripe mangos or enough for 1 ½ cup mango puree

6 tbsps coconut oil (Dairy free) or butter melted a bit if you are ok with Dairy

3 large eggs lightly beaten

1/4 cup coconut milk or yogurt

1 tbsp vanilla

1-2 tsp garam masala, cinnamon or pumpkin spice seasoning (trust me you’ll love it)

1-2 tsp ground ginger

2 cups almond flour or oat flour

1 tsp baking soda

1 tbsp baking powder

Stevia/Truvia drops or ¼ cup honey to taste


Directions:

Preheat oven to 350 degrees

Put the chopped mangos in blender. Any of the little blenders work fine to puree.

In a separate bowl or mixer combine the pureed mangos, the coconut oil or butter, 3 beaten eggs, coconut milk or yogurt, vanilla, spices and mix together. Next add the two cups of flour, baking soda, baking powder and mix again. At this point taste the batter and figure out if you’d like to add stevia or honey to taste. You may also not taste the spices as much so you can add more in if you’d like. Every time I’ve made this I’ve had to add more in after mixing. It’s really up to you how sweet you’d like it to taste. I’ve tried it with just the stevia or truvia and I’ve tried it with more raw honey to add sweetness.


Once you’ve gotten your preference figured out, get your loaf pan lightly oiled up and add parchment paper (to prevent sticking). Put in the oven and set timer for 52 minutes. It could take up to 60 but check it at 52 to see if it’s all the way cooked. Will differ a bit depending on flour used. I prefer almond flour but I've tried both. Happy Baking!
