Rainbow Chicken Salad

When I have been stressed for time I have resorted to a grocery store chicken or tuna salad. However, what I have found was they were jam packed with additives, too much mayo, and cost more than I wanted to spend for just a protein source.
I decided to take matters into my own hands and experiment and this is what I came up with!
With this recipe, you get maximum nutrition with high packed protein and veggies, and minimal lettuce. What does that mean? More bang for your buck and flavor for your taste buds!
You will need:
1 can of canned chicken (I recommend Walmart Great Value or Costco Kirkland brand)
1 tbsp mayo
Yellow Mustard
Siracha (optional if you want some spice)
Chopped Veggies:
red or yellow bell pepper
red/purple cabbage
cilantro
broccoli
Spinach (optional)
Directions:
Open the can of chicken and drain the juice. Mix the chicken with 1 tbsp of mayo and mustard. Continue mixing until chicken is fully coated. Add siracha if you'd like some spice.
Next add your chopped vegetables (bell pepper, purple cabbage, broccoli, cilantro and optional spinach.) Shake it up in your container and it's ready to go! Easy peasy!!
Prep Time: 8 minutes if veggies are not pre chopped
Cook Time: 0 minutes! woo hoo!
Estimated 300 calories, 34 grams of protein, 14 fat, 4 carbs mmm
